We use the gastronomy of the entire Mediterranean basin as our starting point, not only Spain, Southern France, Italy and Greece, but Morocco, the Lebanon and the Middle East. We then call on subtle influences from as far afield as Asia and South America to create new perspectives and unusual combinations that present our food in an unusual and refreshing light.
Cocina de autor – Spanish for signature cooking with a twist – is the inspiration for Marcia Barrington, chef director and founder of Marcia’s Kitchen. It is all about taking traditional recipes and techniques then reinventing and reinterpreting them in a way that creates something unmistakeably original. It lies at the heart of every dish we send out, and has done since we were founded in 2009.
